Things seemed bleek for Dan a couple of months ago.
He was laid off from the Venetian and prospects in
Las Vegas were few and far between.
He pursued an opportunity with Scott Conant, an
American chef, author, Food channel personality,
and restaurateur.
Scott owns Scarpetta, a hugely popular restaurant,
located in the heart of New York City and Miami.
A scarpetta is a piece of bread used to scoop up the
last bits of sauce, something dear to the heart of
this Italian family.
To Dan's delight, he was added to the Scarpetta family
and is in NYC to learn about the company. He is then
off to Toronto for an opening of yet another Scarpetta. Eventually, he will be heading back home to
Las Vegas for a planned Scarpetta opening there as well.
Dan works extremely hard at his craft and it looks like it is paying off, his dream of cooking Italian food
has become a reality.
